Despite their long horns and shaggy looking
appearance, both the bulls and cows are
mild tempered. The cows possess excellent
mothering instincts along with easy and
independent birthing. They are known for
being gentle, calm and easy to work with.
At present day, the beef market demands a
leaner meat which Highlanders are superior
in this department and studies have shown
that their meat is lower in cholesterol and
fat. This meat is higher in Omega 3's,
vitamins, and minerals. Their meat is quite
leaner than most, but also has great flavor.
